Elegantology Gallery & Restaurant at Publika, a trendy hip restaurant which combine fashion and food together. To supporting young culinary and fashion artists, Elegantology provides a platform for rising fashion and gastronomy talents.

The menu showcases the recipes of guest chef Jes Chew to show us the latest culinary creations, and also featured on Elegantology Gallery and Restaurant’s new menu now. He created 3 dishes which offers a series of beautifully presented and a delightful taste sensation, prefect paired with cocktails. 

This menu prepared by using premium ingredients, definitely is an exquisite option for gourmet lovers. Priced at RM150++ per pax and available for a limited time only.


Spicy Tuna, Compressed Watermelon, Pickled Chilli 
I choose this as my appetiser and i believe this is a great start, because it is so delicious! This pretty plate presentation is like a lotus pond, who can resist this visual beauty? I feel so refreshing when i look at the dish hahaha! The food was amazing, perfect matching of spicy tuna and compressed watermelon. The spicy tuna is tender and fresh while compressed watermelon gives you a refreshing and sweetness taste in mouth, enjoy the different taste in every bite.

Bang Bang Chicken, Spicy Peanut Butter, Cucumber String, Macadamia Nuts
I don't like to eat chicken breast, dislike the chewy rough texture. Chef Jes Chew using a unique culinary skill to cook Bang Bang chicken where the chicken breast is so soft like bread. Served with spicy peanut butter that makes a great combination, with a spicy twist of bold flavors. 

Charcoal Smoked Salmon, Soy Ikura, Pickled Melon Salad
WAO! This is our reaction to this dish while served on table, LOL! How to keep a dish fresh while eating? Chef Jes Chew showed you a great idea with the smoked salmon on bed of ice in hand shaped! 

All the appetizer is paired with Havana Rambutan Mojito

Rambutan Muddle with Mint leaves, orange quaters, lychee juice and caramel.

Pumpkin Soup with white Truffle Oil and Crabmeat

Creamy pumpkin soup drizzled with white truffle oil for that extra touch of luxury, i was satisfying with the aroma of truffle oil.

Paired with Martell Cane 
Martell VSOP shaken with Sugar Cane Juice, triple Sec and Ribena.
Main Course

Tiger Prawn Pasta, Crispy Garlic, Prawn Head Foam

My favourite of the menu! Duo pasta boasts juicy prawns that give you a spicy kick in the taste buds while the prawn head foam was like calmed you down from the spiciness. It's a simple but totally winning combination that everyone will love!

Sarawakian Black Pepper Beef

Served with Onion Parsnip Mash and Garlic Broccolini. Sous Vide cook it at 57ºC/135ºF which is the best to make the beef so tender and juicy, such an impressive dish! 

Curry Cod, Nestum Crust, Otak-Otak Cream, Eggplant, Croissant

Aromatic curry cod with the nestum crust coating was taste like cereal prawn, but i felt the otak-otak cream was a bit out of tune with this dish. It's just not my cup of tea may be.

Varlhona Ganache, Mandarin Orange Segments, Citrus Cake, Orange Peel
If you are chocolate lover, Varlhona Garnache is your best choice.

Ice Cream Potong Jagung, Pop Corn, Durian and Corn Cream

Paired with Martell Toffee – Martel VSOP, Kahlua, Cointreau, Caramel syrup and freshly brew coffee, shaken & strained.
