Fine Dine @ Alto Sky Lounge, Hatten Hotel Malacca

I went to Malacca last week for hotel and also food review, i decided to blog about food first because CNY/ Valentine's day is coming very soon and it might be one of your choice. Stayed at Hatten Hotel, the luxury hotel in Malacca, and managed to go to their sky lounge for fine dining review. *please stay tuned for the Hatten Hotel room review, i try my very best to clear all pending posts*
Bringing you with the height of luxury and a beautiful view of Malacca, Alto Sky Lounge at 22nd floor of Hatten Hotel offers guests spectacular views of Melaka’s coastal township. 
Alto Sky Lounge is a fusion cuisine, West infused Asian. It has 2 parts, one is indoor and it's fine dining with a variety of fine wines.

Another part is al fresco lounge where guests can sit back and relax against this stunning backdrop while sipping a mix of deftly crafted cocktails and delicious light bites.
Featuring a polished design, upscale ambience and the dulcet tones of a live band. I had my fine dining review in Alto Sky Lounge, thanks to the Executive Sous Chef Yee Weng Ding to customise a exclusive menu for us, he told us that he try to crossover between Western/ French and Nyonya food since Malacca is known for for her BaBa Nyonya (peranakan) culture. Kick start with this wonderful Amuse Bourse
Salmon Fume Boursin Marcotte
It is a smoked salmon roulade with lemon herbs boursin and balsamic pears. Bite size salmon is just nice for ladies, melt in your mouth flavorful. 
Appertizer
Seared Foie Gras with Coconut Chestnut Puree.
Combines elements of different culinary traditions between French and Malaysia, I was pleased with the wonderful taste of foie gras with enhanced green apple caramelised and truffle balsamic vinaigrette.
Soup
Sun-God Poseidon Nage Hokkaido Mollusco
Luscious and creamy royal seafood soup with coconut cream, fresh scallop, salmon roe and yoghurt.
 Sorbet
Thai Tamarind Nectar Sorbet
When this serve on the table, everyone was so curious and wondering why we had dessert in mid of dinner. This is totally surprising us, taste like asam boi sorbet but very appetising so we can eat more after this. LOL! 
 Fish
Atlantis Black Cod in Truffle Abalone White Consomme
 Seared black cod on braised daikon with truffle abalone consommé, baby abalone, tea tree mushroom and asparagus. Black cod is amazingly buttery and it just melts in my mouth, enhanced fragrant with truffle abalone consommé which has a hint of truffle flavour, I LOVE TRUFFLE!!!!
Beef
Wagyu Beef Scotch Fillet with Asian Truffle Cream Essence and Foie Gras Butter
Char-grilled Wagyu ribeyes, saffron cauliflower puree, baby French bean, pickled beetroot and cheese crackers.
 Chicken
Citronelle Oriental Roulade
 Lemon grass chicken stuffed chestnuts prawn, potato skordalia, asparagus spear, sesame pumpkin, dried cherry tomato, alla braces sauce. All of us love this dish so much! When i take a bite of chicken, it is so tender and juicy, taste like Thai-styled teriyaki chicken with lemon grass fragrant.
 Dessert
Royale Coffee Walnut Cheese Cake
Fine Dining lovers, Alto Sky Lounge won't disappoint your sweet tooth with their indulgent desserts. This cheese cake has a stunning plate presentation, served with coffee caramel sauce, pandan meringue and summer berries. I love that pandan meringue the most, amazed by it's deeply fragrant pandan concentrate. From sour to sweet to slightly bitter, layering flavour dessert is perfect ending for our dinner.
